beer braised ribs with chimichurri

It is, perhaps, not quite traditional to be eating ribs for a Christmas lunch but that is what we will be doing here at onebitemore central this year.

It wasn’t our original plan though, oh no. That plan involved (and still involves) turkey and prawns and oysters and some sort of delicious pudding.

The ribs are an add on. By special request of everyone who managed to snitch a morsel this Saturday past. And even one who didn’t. One who stared at them plaintively whilst inhaling deeply. One who asked if “please Cherlie” we could have the ribs for Christmas. “Please?

I was going so well for a moment there, wasn’t I? Bright and happy. Perky, even.

And then, with no explanation at all, I crashed. Spent three days incapacitated. In bed and facing a wall of exhaustion and anxiety coupled with a rather perplexing case of being totally unable to stand upright for more than a couple of minutes without falling over.

It was bizarre I tell you. More so because, after doing as many tests as a lab rodent, nothing was wrong with me.

Well, except for those cuh-razy symptoms.

Sometimes I have to stop and remind myself that I had a six week long Summer break. Because you know what? On days like this, it feels like I’ve been at it for a good couple of (hundred) years.

It doesn’t help that my favourite person in the entire world (hallo Bean!) and longtime BFF (hallo Lex!) have deserted me for calm blue waters and powder coated ski slopes (respectively, not together). Or that I’ve been slowly coming to terms with the fact that sometimes some people’s lives can be incompatible, despite the people themselves being very much the opposite.

macaroni ragu (aka not-quite-spag-bol)

The days, they are getting shorter, and (as my shorts-in-10C-weather-wearing-friend would say) more “fresh”.

I prefer to term it “cold! Oh-so-cold!” myself.

And so it is, in these nippier climates, that thoughts turn to warming soups. Hearty stews. Butter-and-cream mashed potatoes and slow cooked joints of meat. And, of course, that dish that has so ubiquitously become known as “spag bol”.

I’m a bit of a faux-foodie. Actually, scratch that. I’m a lot of a faux-foodie. I smile animatedly when told about developments in the preservation of cheeses I’ve never heard of and throw “insightful” comments into conversations about tomato varietals. I love a robustly flavoured, home cooked meal – but often don’t know how to balance herbs and spices so that it tastes the way I imagine it should.
